Winter Roast Pork, Mushroom & Mascarpone Pie with Dill Sauerkraut Recipe

This golden, bubbling pie brings together the grounding richness of roast pork, the earthy sweetness of mushrooms, and the gentle tang of dill sauerkraut. It’s winter comfort with a gut-health twist — soothing, satisfying, and microbiome-friendly.
Ingredients
Filling:
- 350–400 g roast pork, diced (leftovers work beautifully)
- 500 g button mushrooms, sliced
- 1 white onion, finely diced
- ¾ pot mascarpone (about 180 g)
- 2 tbsp olive oil or butter
- 1 tsp za’atar
- Sea salt & black pepper to taste
- ½ cup dill sauerkraut, drained - Vadaez
- splash of bone broth or stock
Pastry:
- 1 sheet all-butter puff pastry (use lightly — base and lattice top)
- Butter for greasing
- 1 egg, beaten (for brushing)
Method
- Prepare the pork: Dice your roast pork into small cubes — about 350–400 g is ideal.
- Cook the vegetables: In a large pan, heat olive oil or butter over medium heat. Add onion and cook until soft and translucent. Add mushrooms and sauté until golden, releasing their moisture.
- Create the sauce: Stir in mascarpone, za’atar, salt, and pepper. Add pork and simmer for 10 minutes until the sauce thickens and flavours meld.
Gently fold in the dill sauerkraut at the end to retain some live probiotics. This ignites the flavour - Assemble the pie: Lightly grease a pie dish with butter. Line the base with a thin layer of puff pastry.
Fill with the creamy pork and mushroom mixture, then lay thin pastry strips across the top to form a rustic lattice. Brush with egg. - Bake: Bake at 200°C (180°C fan) for 25–30 minutes, until golden and bubbling.
